"Where's the Beef?"
Why, it's on our table!!

We enjoy beef an average of twice a week, and I love
to cook my standard recipes as well as try new recipes.
For an August assignment *, I chose a quick and tasty recipe from the Allrecipes site:



  Step One - Gather your ingredients for marinating the steak.
I like to let it marinate for at least a couple of hours; the longer, the better!





 Add Asian-sesame dressing, hoisin sauce, and fresh lime juice to a small bowl.
Mix with a metal whisk to combine.





Place steak in a resealable container or plastic baggie. 
Pour 3 tablespoons of marinade over the steak, and flip to coat both sides.
Refrigerate for at least 15 minutes, but preferably for a couple of hours.
Cover and refrigerate remaining marinade until ready to use.






Before adding the steak to the grill, gather remaining ingredients.



  


Cook the steak over a medium grill to desired doneness (medium-rare for us!).






While the steak is grilling, cook the pasta according to package directions.
Add veggies during the last 3 minutes of cook time.






Drain the pasta and veggies.






Combines the cooked pasta and veggies with the remaining marinade in a large bowl.
Stir to coat well.






Slice the steak, thinly and against the grain.






  To serve, arrange steak over noodles and veggies.
Sprinkle with toasted sesame seeds, if desired.

Ingredient List:

                                 1 (16 ounce) beef top sirloin steak, cut 1 inch thick 
                                 6 ounces uncooked whole grain spaghetti
                                 1 (8 ounce) package sugar snap peas
                                 1 medium red bell pepper, thinly sliced
                                 1 cup packaged shredded carrots
                                  Toasted Sesame Seeds

Marinade:
                                 1/3 cup reduced-fat or regular Asian-sesame dressing
                                 1/3 cup hoisin sauce
                                 2 tablespoons fresh lime juice

Allrecipes.com Chicken Tortilla Soup

For this recipe, I followed a video from Allrecipes.com:


When following a video, it helps to keep your player in a handy spot.
I use a clear plastic decorative plate stand - it's perfect for my Kindle Fire!



  Chop up your onion and garlic.



  Add some extra virgin olive oil to a large heavy pot.



Saute the onion until tender.  Add the garlic and saute a bit more.



Add your seasonings.

 
 
Add the can of crushed tomatoes, the broth, and the water.
Stir to combine, bring to a boil, and let simmer 5-10 minutes.



Shred or chop some cooked chicken.
Add to the pot and continue simmering.



Smells delicious - but wait, there's more!!



Add: the can of corn with liquid, 
the can of black beans with liquid,
and the can of green chiles.
 


Add chopped cilantro.



  While the soup simmers a bit more to allow the flavors to meld,
make a batch of rice and prepare some condiments.  
We like salsa, green onion, and fresh avacado.
You'll also want some tortilla chips handy!


 
  When everything is ready, scoop some rice into your bowl.  I recommend a big bowl.



Ladel a hearty serving of soup over your rice.



   Top with condiments, and enjoy!


Ingredient List:
1 onion
3 cloves garlic
1 Tbsp extra virgin olive oil
2 tsp chili powder
1 tsp dried oregano
1 28oz can crushed tomatoes
1 10.5oz can chicken broth (or equal amount of homemade broth)
 1-1/4 cups water
1 15oz can yellow corn
1 oz can black beans
1 4oz can green chiles
1/4 cup chopped cilantro
2 boneless chicken breast halves, cooked
3 green onions
1/2 avacado
jarred salsa
tortilla chips of choice

For this recipe, I followed a video from Allrecipes.com:
 
 
 
First up - Gather your ingredients!
 
 
 
Rinse your potatoes, and pat dry.
 
 
 
Cut potatoes into bite-sized pieces; quarters or sixths work well.
Spread in a casserole dish that you've seasoned with a little extra virgin olive oil.

I'm so glad you noticed!
 
 
 
Melt butter in microwave or on stove-top.
 
 
 
Crush and mince garlic.
Add to melted butter.
 
 
 
Add salt...
 
 
 
and any favorite special seasonings.
As usual, I added some of our favorite Butt Rub!
 
 
 
Squeeze to get juice from one lemon - or, as in our case,
one fresh-from-your-own-tree grapefruit!
 
 
 
If using a grapefruit -
Go ahead and squeeze extra, to add to a glass of ice and vodka if you'd like!
 
 
 
 
Stir to combine.
 
 
 
Pour the mixture over the potatoes.
 
 
 
 
Sprinkle with grated or shredded parmesan cheese.
 
 
 
Stir it up a little!
Cover with aluminum foil and bake at 350 for 30 minutes.
 
Remove foil, and bake for another 10-15 minutes.
 
 
 
 This is an easy and delicious meal, perfect as a quick work-night meal or as a weekend wind-down. Marinate your favorite cut of steak and grill to your liking, make some green beans or other vegetable, and add these yummy potatoes!
 
 
Ingredient List:
2 to 2-1/2 lbs red potatoes
extra virgin olive oil
1/4 cup butter
2-3 garlic cloves
Seasonings - sea salt, your family's favorites
1 lemon or small grapefruit
