"Where's the Beef?"
Why, it's on our table!!

We enjoy beef an average of twice a week, and I love
to cook my standard recipes as well as try new recipes.
For an August assignment *, I chose a quick and tasty recipe from the Allrecipes site:



  Step One - Gather your ingredients for marinating the steak.
I like to let it marinate for at least a couple of hours; the longer, the better!





 Add Asian-sesame dressing, hoisin sauce, and fresh lime juice to a small bowl.
Mix with a metal whisk to combine.





Place steak in a resealable container or plastic baggie. 
Pour 3 tablespoons of marinade over the steak, and flip to coat both sides.
Refrigerate for at least 15 minutes, but preferably for a couple of hours.
Cover and refrigerate remaining marinade until ready to use.






Before adding the steak to the grill, gather remaining ingredients.



  


Cook the steak over a medium grill to desired doneness (medium-rare for us!).






While the steak is grilling, cook the pasta according to package directions.
Add veggies during the last 3 minutes of cook time.






Drain the pasta and veggies.






Combines the cooked pasta and veggies with the remaining marinade in a large bowl.
Stir to coat well.






Slice the steak, thinly and against the grain.






  To serve, arrange steak over noodles and veggies.
Sprinkle with toasted sesame seeds, if desired.

Ingredient List:

                                 1 (16 ounce) beef top sirloin steak, cut 1 inch thick 
                                 6 ounces uncooked whole grain spaghetti
                                 1 (8 ounce) package sugar snap peas
                                 1 medium red bell pepper, thinly sliced
                                 1 cup packaged shredded carrots
                                  Toasted Sesame Seeds

Marinade:
                                 1/3 cup reduced-fat or regular Asian-sesame dressing
                                 1/3 cup hoisin sauce
                                 2 tablespoons fresh lime juice

Bit of Flavor Pepper Steak over Rice




Pepper Steak over Rice - sometimes you just have to have some...  and last night was one of those nights for us!

I basically used the recipe I found on allrecipes.com:

Ingredients:
2 tablespoons olive oil
2 cloves garlic
1 medium onion
2 large bell peppers
1/3 cup soy sauce
1/3 cup honey
1/3 cup red wine vinegar
1 1/2 lbs flank steak, cut into strips
2 cups rice



1) Mince the garlic.
The recipe called for 2 cloves; we like garlic, and I used 3 cloves.  Your call.
I love my Pampered Chef Cutting Board!  I use it for all of my fruit and veggie jobs.
And yes, I know that there are other (easier?) ways to prepare the garlic; I happen to enjoy doing it all by hand.  However, I just might put the Pampered Chef Garlic Peeler and Slicer Set on my Wish List...




2) Chop the onion.
Yep, I'm using my PC Cutting Board again!
The recipe called for chopped onions, so I chopped the heck out of mine. Next time, I think I will just cut the onion into thin slices.


3) Slice the pepper into thin strips.
I used one red and one green pepper.  And my PC Cutting Board, of course!  ;)


4) Slice the steak.
Or do what I do - buy it already sliced!


5) Start your rice.
I use a mix of equal amounts white rice and brown rice.  I keep it stored already pre-mixed.  Makes it simple when I'm in the mood for making rice!
I'm only allowed to make rice in my Rice Cooker.  It was a gift one Christmas, and I have used it, abused it, melted at least one leg off of it...  But it keeps on saving my rice and keeping it edible, every time.



6) While the rice is cooking, heat the oil in a heavy skillet over medium-high.



 7) Add the onion, pepper, and garlic.
Cook 2-3 minutes, stirring frequently, until veggies are tender-yet-crisp.  Set aside.


8) In the same skillet, heat the soy sauce, honey, and red wine vinegar over medium high.


9) Add the steak.  Cook until done, maybe 10-15 minutes, stirring frequently.
Have you been admiring my Pampered Chef Bamboon Spoon?  I bet you have been.  I would be too, if I were you.  This pointy-tipped one is my favorite.


10) Add the veggies to the meat, and cook for another 10-15 minutes.
Flavors will mingle.  Your house will smell so good.  You'll end up very, very hungry.


See??  You'd love some right now!!


11) About the same time that your meat and veggies are done, your rice should be ready.  Spoon some rice out onto a plate, and top with the Pepper Steak.  Enjoy!!
